I think it has mostly to do with the quality of the camera sensor. During CAPTURE Quebec, I specifically remember trying my hand at editing a very similar image that Frazer Family has posted here taken with the same Sigma camera and found it to be very difficult, unlike the image I had taken with my camera and had edited on my computer.
However, it could be made to look more like my shot with a program like Photoshop where local adjustments are easier made than in Lightroom.
