I moved the text up a little, but I wasn’t sure how much would look right. Right now it almost looks like her elbow is resting on the words, but if I moved it up even further would it look like a mistake? (As if I was trying to center it but didn’t quite get it centered)

Better. Try to move your text around till the entire design feels evenly visual weighted. By looking at the photo, I can tell it has a strong central weight to it, so I would move the text up even more.
